Frixuelos de Asturias Recipe - Asturian Crepes
Frixuelos are a simple crepe-like dessert, which can be prepared in less then 20 minutes. Roll and fill them with fruit preserves, custard or whipped cream.

Ingredients
- 1 ½cups sifted flour
- 3tablespoons sugar
- ½teaspoon salt
- 3large eggs
- 16ounces milk
- 2tablespoons unsalted butter
Instructions
Step 1
Place butter in a small bowl and heat in microwave until melted. To melt on stovetop, put butter in a small saucepan and heat over low heat, being careful not to burn the butter.Step 2
Sift together flour, sugar and salt into a large mixing bowl and set aside.Step 3
In a medium mixing bowl, beat the eggs until thick. Use a stick blender or hand mixer to make the job easier. Beat in milk and melted butter until well blended.Step 4
Add milk-egg mixture to dry ingredients and beat until batter is smooth.Step 5
Heat a non-stick frying pan over medium heat. Melt a very small amount of butter in the pan. Using a ladle, pour batter into pan and cook over medium heat until lightly browned on bottom. Turn over and lightly brown other side.Step 6
When cooked, transfer to a warm plate. Spoon filling, such as applesauce in center, and roll up. Garnish with orange slices. Serving Suggestions
