Madeleine Cookies

Madeleines are like little cakes but in a cookie shape. The cookies made with this recipe are light, soft, and buttery. Perfect with tea.

  1. Step 1

    Sift cake flour, baking powder, and salt. Stir in zest. Set aside. 
  2. Step 2

    Combine eggs and sugar. With an electric mixer, beat on high for 3 minutes. The  mixture will be thick.
  3. Step 3

    Add the melted butter and mix by hand. Fold in flour mixture using figure-8 motion. Refrigerate for 3 hours.
  4. Step 4

    Preheat oven to 400 F. Either coat the Madeleine pan with cooking spray, or brush with melted butter.
  5. Step 5

    Divide batter between two 12-cup Madeleine pans. Bake Madeleines for 8 to 10 minutes or until browned around edges.
  6. Step 6

    Remove pans from the oven. Tap on the counter, and dump out onto cooling racks.
  7. Step 7

    Sprinkle fluted tops with powdered sugar just before serving.
