Madeleine Cookies
Madeleines are like little cakes but in a cookie shape. The cookies made with this recipe are light, soft, and buttery. Perfect with tea.

Ingredients
- 1cup cake flour
- ½teaspoon baking powder
- ¼teaspoon salt
- 1small orange (zest)
- 3eggs
- ¾cup sugar
- ½cup butter ( melted and cooled slightly)
- Garnish: powdered sugar
Instructions
Step 1
Sift cake flour, baking powder, and salt. Stir in zest. Set aside.Step 2
Combine eggs and sugar. With an electric mixer, beat on high for 3 minutes. The mixture will be thick.Step 3
Add the melted butter and mix by hand. Fold in flour mixture using figure-8 motion. Refrigerate for 3 hours.Step 4
Preheat oven to 400 F. Either coat the Madeleine pan with cooking spray, or brush with melted butter.Step 5
Divide batter between two 12-cup Madeleine pans. Bake Madeleines for 8 to 10 minutes or until browned around edges.Step 6
Remove pans from the oven. Tap on the counter, and dump out onto cooling racks.Step 7
Sprinkle fluted tops with powdered sugar just before serving.
