Pad Thai Noodle Salad
This delicious Pad Thai noodle salad features rice noodles, shrimp, vegetables, and a tangy tamarind dressing. It's also light in calories and fat.

Ingredients
- 8ounces rice noodles
- 20to 25 medium uncooked shrimp (peeled, deveined, tails can be left on)
- 2tablespoons vegetable oil
- 4cloves garlic (minced)
- 1thumb-size piece galangal or ginger (minced)
- 1red bell pepper (sliced thinly)
- 1stalk celery (sliced thinly)
- 3spring onions (sliced thinly)
- 2to 3 cups bean sprouts
- 1cup fresh cilantro (lightly chopped)
- ½cup fresh basil (lightly chopped)
- ⅓cup dry roasted unsalted peanuts (lightly chopped)
- For the Dressing:
- ½cup boiling water
- 1 ¾tablespoons tamarind paste
- ¼cup packed brown sugar
- ¼cup fish sauce
- 1to 2 tablespoons chili sauce (or 1/2 to 1 teaspoon cayenne pepper or dried crushed chili)
