Caramelized Roasted Carrots
Carrots tossed with melted butter and brown sugar and then roasted until caramelized are the perfect side to roast chicken or beef.

Ingredients
- 1bunch carrots (peeled, greens trimmed if needed)
- 2tablespoons butter (melted)
- 1tablespoon brown sugar
- Black pepper, to taste
- Salt, to taste (sea salt flakes preferred)
- Garnish: fresh chopped parsley or cilantro
Instructions
Step 1
Gather the ingredients. Preheat the oven to 350 F. Line a baking tray with aluminum foil.Step 2
Slice the larger carrots in half lengthwise so that all the pieces are roughly the same size. You may need to quarter extra-large carrots.Step 3
Arrange the carrots neatly on the lined tray, making sure they don’t overlap.Step 4
Brush the melted butter onto the carrots lightly with a silicone pastry brush.Step 5
Sprinkle them with the brown sugar before giving them a good grind of black pepper to finish.Step 6
Bake in the oven for around 25 minutes or until soft and beginning to brown.Step 7
Sprinkle with the crushed sea salt flakes and garnish with parsley or cilantro.Step 8
Serve and enjoy.
