Caramelized Roasted Carrots
Carrots tossed with melted butter and brown sugar and then roasted until caramelized are the perfect side to roast chicken or beef.
- Serves: 4 persons
- 1bunch carrots (peeled, greens trimmed if needed)
- 2tablespoons butter (melted)
- 1tablespoon brown sugar
- Black pepper, to taste
- Salt, to taste (sea salt flakes preferred)
- Garnish: fresh chopped parsley or cilantro
Step 1Gather the ingredients. Preheat the oven to 350 F. Line a baking tray with aluminum foil.
Step 2Slice the larger carrots in half lengthwise so that all the pieces are roughly the same size. You may need to quarter extra-large carrots.
Step 3Arrange the carrots neatly on the lined tray, making sure they don’t overlap.
Step 4Brush the melted butter onto the carrots lightly with a silicone pastry brush.
Step 5Sprinkle them with the brown sugar before giving them a good grind of black pepper to finish.
Step 6Bake in the oven for around 25 minutes or until soft and beginning to brown.
Step 7Sprinkle with the crushed sea salt flakes and garnish with parsley or cilantro.
Step 8Serve and enjoy.
