Korean Vegetable Porridge (Yachae Jook)
This Korean rice porridge (vegetable jook) recipe is deceptively delicious. Vegetables and rice make for a soothing, fragrant meal.
- Serves: 4 persons
- 1cup rice
- 1tablespoon sesame oil
- ½cup chopped onion
- ½cup chopped carrot
- ½cup chopped radish
- 2to 3 cups vegetable soup stock
- Salt, to taste
- Black pepper, to taste
Step 1Gather the ingredients.
Step 2Soak the rice for at least 90 minutes. Drain well.
Step 3In a large pot, heat the sesame oil over medium heat.
Step 4Sauté the onion, carrot, and radish for 2 to 3 minutes.
Step 5Add the rice and stir-fry everything together for another minute.
Step 6Add the soup stock and bring to a boil.
Step 7Immediately reduce to a simmer and cook over medium-low heat for about 30 minutes.
Step 8Stir and continue to cook for about 10 more minutes. Add salt and pepper to taste.
Step 9Serve and enjoy.
