Crock Pot Sweet and Sour Kielbasa

Ingredients
- 1(20-ounce) can pineapple chunks
- 2pounds kielbasa
- 1large onion
- 1bell pepper
- 2tablespoons cornstarch
- 2tablespoons apple cider vinegar (or balsamic vinegar)
- 1tablespoon soy sauce (low sodium)
- ⅓cup brown sugar (packed)
Instructions

Place a sieve or colander over a bowl and drain the pineapple, reserving the juice.Step 2
Put the pineapple chunks in the slow cooker and set the juice aside.Step 3
Cut kielbasa into 1-inch to 2-inch lengths.Step 4
Peel the onion and cut it into quarters. Cut the onion quarters crosswise into 1/4-inch slices.Step 5
Cut the bell pepper into 1-inch chunks.Step 6
Add the kielbasa pieces to the slow cooker along with the onion and bell pepper.Step 7
To the bowl with the reserved juice, add the cornstarch and stir the mixture until smooth. Add the vinegar, soy sauce, and brown sugar; stir to blend.Step 8
Pour the juice mixture over the kielbasa.Step 9
Cover and cook on low for 4 to 6 hours.
