Spam Fried Rice
This easy fried rice is loaded with crispy pieces of Spam and veggies. It's ready in under 30 minutes and a great way to use up leftovers.

Ingredients
- 2tablespoons vegetable oil (divided)
- 6ounces Spam (diced)
- 1tablespoon butter
- 2eggs (beaten)
- 2scallions (sliced, whites and greens divided)
- 2 cloves garlic (minced)
- ½cup frozen peas
- ½cup carrots (diced)
- 3cups cooked day-old white rice
- 1tablespoon rice vinegar
- 1 ½tablespoons soy sauce
- 1tablespoon brown sugar
- ½cup peanuts (chopped)

Gather the ingredients.Step 2
Add 1 tablespoon of the oil to the pan and heat on medium-high heat. Add the Spam cubes and sauté until golden brown. Remove the Spam from the pan leaving as much oil behind as possible. Add in the rest of the oil and the butter.Step 3
Add the butter and the beaten eggs to the pan and heat on medium-high heat constantly scraping the pan until the eggs are cooked through.Step 4
Add the scallion whites and the minced garlic. Sauté until softened.Step 5
Add in the peas and carrots and rice to the pan. Toss to combine and sauté until the rice is lightly fried. Then pour on the rice vinegar. Stir the rice to coat and sauté for another 2 minutes.Step 6
Add in the soy sauce and brown sugar. Toss to combine and cook another 1 to 2 minutes. Add the Spam back to the pan.Step 7
Top with chopped peanuts and scallion greens, and serve immediately.
