Pickled Ramps (Wild Leeks)

Ingredients
- 1pound ramps ( Allium tricoccum )
- 1cup water
- 1 ¼cups white wine vinegar (or apple vinegar)
- 2tablespoons honey
- 1tablespoon Kosher salt (or other non-iodized salts)
- 1small hot chile pepper (chopped or crushed (you can use fresh or dried))
- 2to 4 whole spicebush ( Lindera benzoin ) or allspice berries
- ½teaspoon whole mustard seeds
- ½teaspoon whole coriander seeds
- ¼teaspoon whole cumin seeds
- 6to 8 whole black peppercorns
