Ramen noodle salad
Throw this quick and easy salad together for lunch or a lighter dinner with a little bit of a kick.

Ingredients
- 2ramen noodles
- 1chicken breast, cut into pieces
- ½tsp chilli powder
- 1tsp sweet paprika
- ½tsp garlic powder
- 1tbsp olive oil
- 1red pepper, cut into chunks
- 150g frozen or canned sweetcorn, drained
- 5pickled cucumbers, sliced
- 3tbsp mayonnaise
- 1tsp Dijon mustard
Instructions
Step 1
Put the noodles into a bowl, then break up a little and pour over boiling water. Cover and leave to swell up (you can add the flavouring packs from the noodles, if you like).Step 2
Season the chicken by tossing it in the chilli, paprika, garlic and some seasoning. Heat the oil in a frying pan, then fry the chicken until golden and cooked through.Step 3
Drained the noodles, then combine with the vegetables. Add the mayonnaise and mustard, then gently mix everything together and place the chicken on top. Chill for 30 mins before serving – you can garnish with some fresh herbs, if you like.
