Ramen noodle salad
Throw this quick and easy salad together for lunch or a lighter dinner with a little bit of a kick.
- Serves: 4 persons
- 2ramen noodles
- 1chicken breast, cut into pieces
- ½tsp chilli powder
- 1tsp sweet paprika
- ½tsp garlic powder
- 1tbsp olive oil
- 1red pepper, cut into chunks
- 150g frozen or canned sweetcorn, drained
- 5pickled cucumbers, sliced
- 3tbsp mayonnaise
- 1tsp Dijon mustard
Step 1Put the noodles into a bowl, then break up a little and pour over boiling water. Cover and leave to swell up (you can add the flavouring packs from the noodles, if you like).
Step 2Season the chicken by tossing it in the chilli, paprika, garlic and some seasoning. Heat the oil in a frying pan, then fry the chicken until golden and cooked through.
Step 3Drained the noodles, then combine with the vegetables. Add the mayonnaise and mustard, then gently mix everything together and place the chicken on top. Chill for 30 mins before serving – you can garnish with some fresh herbs, if you like.
