These snickerdoodles are so delicious, you would never guess they are vegan. A little vinegar is the secret ingredient to chewy, light cookies.

    Gather the ingredients.

    In a large bowl, combine flour, cream of tartar, baking soda, and salt.
  3. Step 3

    In a separate bowl, whisk together 1 cup of the granulated sugar along with vegetable oil, water, apple cider vinegar, and vanilla extract until smooth.

    Add wet ingredients to dry ingredients and stir to combine.

    Cover bowl with plastic wrap and refrigerate dough for at least 1 hour.

    When ready to bake, preheat oven to 375 F and line 2 baking sheets with parchment paper. In a small bowl, combine 3 tablespoons of sugar with ground cinnamon.

    Form dough into 1-inch balls and roll in cinnamon-sugar mixture. Place on prepared cookie sheets.

    Bake for 8 to 10 minutes, or until cookies are set and lightly browned on the bottom. Allow cookies to cool on sheet for 2 minutes before removing them to a wire rack to cool completely.
