Vegan Snickerdoodles
These snickerdoodles are so delicious, you would never guess they are vegan. A little vinegar is the secret ingredient to chewy, light cookies.

Ingredients
- 2cups all-purpose flour
- 1teaspoon cream of tartar
- ¾teaspoon baking soda
- ½teaspoon kosher salt
- 1cup plus 3 tablespoons sugar, divided
- ½cup vegetable oil
- ¼cup water
- 1teaspoon apple cider vinegar
- 1teaspoon vanilla extract
- 1tablespoon ground cinnamon

In a large bowl, combine flour, cream of tartar, baking soda, and salt.Step 3
In a separate bowl, whisk together 1 cup of the granulated sugar along with vegetable oil, water, apple cider vinegar, and vanilla extract until smooth.Step 4
Add wet ingredients to dry ingredients and stir to combine.Step 5
Cover bowl with plastic wrap and refrigerate dough for at least 1 hour.Step 6
When ready to bake, preheat oven to 375 F and line 2 baking sheets with parchment paper. In a small bowl, combine 3 tablespoons of sugar with ground cinnamon.Step 7
Form dough into 1-inch balls and roll in cinnamon-sugar mixture. Place on prepared cookie sheets.Step 8
Bake for 8 to 10 minutes, or until cookies are set and lightly browned on the bottom. Allow cookies to cool on sheet for 2 minutes before removing them to a wire rack to cool completely.
