Oven-Roasted Mixed Vegetables With a Maple Glaze
Try this vegetarian vegetable side dish of oven-roasted winter vegetables in a light maple glaze. This recipe is a simple addition to any meal.

Ingredients
- 1pound sweet potatoes (sliced into 1/2-inch thick rounds)
- 1medium head cauliflower (about 2 cups, separated into florets)
- 9ounces Brussels sprouts (about 2 cups, halved
- 2tablespoons butter or vegan margarine
- ¼teaspoon salt
- ⅛teaspoon ground black pepper
- 2tablespoons maple syrup

Gather the ingredients. Preheat the oven to 400 F.Step 2
On a rimmed baking pan, evenly scatter the chopped sweet potatoes, cauliflower and Brussels sprouts in a single layer and set aside.Step 3
In a small microwavable bowl, place the butter or vegan margarine, maple syrup, salt, and pepper and microwave on low setting, just until the butter or vegan margarine is melted. Give it a quick stir to combine everything.Step 4
Immediately (before it cools!) pour this maple glaze over vegetables and sweet potatoes and gently toss it all together to coat the vegetables and sweet potatoes as evenly as possible.Step 5
Place the baking pan in the oven and cook until tender, about 40 minutes, stirring halfway through.Step 6
