Vegan Chocolate Coconut Cookies

Ingredients
- 5tablespoons water
- 2tablespoons ground flax seeds
- ½cup cane sugar
- ⅓cup coconut oil, melted
- ¼cup almond milk
- ¼cup almond butter
- 1teaspoon vanilla extract
- 1cup whole wheat flour
- ½cup oats
- ⅓cup shredded coconut
- 3tablespoons cocoa powder
- ½teaspoon baking soda
- ½teaspoon baking powder
- ¼teaspoon salt
- ½cup vegan chocolate chips
Instructions
Step 1
Preheat oven to 350 degrees F (175 degrees C). Mix water and flax seeds together in a bowl.Step 2
Mix cane sugar, coconut oil, almond milk, almond butter, and vanilla extract together in a bowl.Step 3
Mix flour, oats, shredded coconut, cocoa powder, baking soda, baking powder, and salt together in a bowl. Stir in sugar mixture, flax seed mixture, and chocolate chips. Spoon batter onto baking sheets.Step 4
Bake in the preheated oven until golden brown, 11 to 13 minutes.
