Chinese Chicken Stock
A good stock recipe is very important in Chinese cooking. This chicken stock uses rice wine and ginger.

Ingredients
- 3pounds chicken pieces, backs, necks, or wings
- 10cups water, cold
- 3slices fresh ginger
- 2 scallions , cut into 1-inch pieces
- 1tablespoon Chinese rice wine , or dry sherry
- 1dash salt, or to taste
- Optional: 1 dash black pepper, or to taste

Step 1
Gather the ingredients.Step 2
Place the chicken pieces in a large pot with 10 cups of water, or enough to cover.Step 3
Add the ginger, green onion, rice wine or sherry. Bring to a boil over medium heat, occasionally skimming off the foam that rises to the top.Step 4
Add salt to taste and black pepper if desired.Step 5
Cover, reduce the heat and simmer for 2 hours. Strain the broth and use as called for in recipes.Step 6
