Easy Lemon Couscous
Lemon couscous is easy to prepare and tastes good when you first make it. Left-overs are even tastier the next day.

- 33oz. can low-sodium chicken broth
- 2tablespoon lemon juice
- 2teaspoons grated lemon zest
- 2cups instant couscous
- ½teaspoon salt

In a medium sauce pot, bring the chicken broth, lemon juice, and lemon zest to a boil.Step 3
In a medium bowl, combine couscous and salt.Step 4
Pour boiling broth over couscous and allow to sit, covered for 10 minutes, or until the broth is absorbed.Step 5
Fluff couscous with a fork and serve immediately.
