Venison Shepherd's Pie

- 5tablespoons butter (cubed, divided)
- 2pounds potatoes (peeled and quartered)
- Salt to taste

- 1 ½teaspoons lard (or meat drippings)
- 1cup chopped onion
- 1cup finely diced carrot
- 1cup finely diced parsnip
- 1cup finely diced celery
- 1clove garlic (minced)
- ¾cup port (or good red wine)
- 2cups ground venison
- 1cup beef stock (or chicken stock), divided
- 1cup chopped white mushrooms
- 2tablespoons flat-leaf parsley (finely chopped)
