Cherry-Cornflake Cookies
Molded cookie using cornflakes and candied red cherries
- Serves: 4 persons
Ingredients
- 2¼ cups all-purpose flour
- 2teaspoons baking powder
- ½teaspoon salt
- ¾cup butter, softened
- 1cup white sugar
- 2eggs
- ⅛cup milk
- 1teaspoon vanilla extract
- 1cup chopped walnuts
- 1cup chopped raisins
- ⅓cup finely chopped candied cherries
- 1⅓ cups crushed cornflakes cereal
- 20candied cherries, quartered
Instructions
Step 1
Mix together flour, baking powder and salt and set aside.Step 2
In large mixing bowl, beat butter and sugar until light and fluffy. Add eggs and beat well. Stir in milk and vanilla, then add flour mixture. Combine well. Add nuts, raisins and chopped cherries.Step 3
Shape dough into balls using level tablespoon as measure. Roll in crushed cornflakes. Place two inches apart on greased cookie sheets. Top with cherry quarter.Step 4
Bake at 375 degrees F (190 degrees C) for approximately 10 minutes until lightly browned. Remove immediately from sheets and cool on wire racks.
