Aunt Betz Cookies
Delicious no-bake bar cookies! For variety you can substitute butterscotch chips for chocolate chips.
- Serves: 2 persons
- 1cup white sugar
- ¾cup butter
- 2½ cups graham cracker crumbs
- 2cups miniature marshmallows
- 12ounces semisweet chocolate chips
- 3tablespoons peanut butter
- ½cup chopped walnuts
- ½cup shredded coconut
Step 1Beat eggs. Combine eggs, sugar, and butter or margarine in a large saucepan. Bring to a boil and let cook on low for 2 minutes, stirring constantly. Turn off heat. Add the crumbs, marshmallows and coconut.
Step 2Spread mixture into a lightly buttered 9x13 inch dish.
Step 3Melt the chocolate chips and peanut butter together and spread over the top of the bars. Refrigerate overnight. Cut into small squares to serve.
