Chilli cheese hot cross buns
Follow our recipe for classic hot cross buns (see 'goes well with' below), then add cheddar and chilli for a grown-up twist. Eat warm with butter, or enjoy as a side to soup
- Serves: 12 persons
- 100g grated mature cheddar
- 1tsp chilli flakes

Step 1Make the dough as directed, omitting the cinnamon, dried fruit and mixed peel, and reducing the amount of sugar to 50g. Knead 100g grated mature cheddar and 1 tsp chilli flakes into the dough after the first prove. Sprinkle over a little more cheddar before baking, and omit the apricot jam glaze.
