Vintage Recipe: Boiled Raisin Cake
This vintage, economical raisin spice cake is made with no milk or eggs. Popular during the Great Depression it tastes just as good now!

Ingredients
- 1 ½cups raisins
- 1cup cold water
- ½cup cold water
- ¼cup shortening
- 1cup white sugar
- ½teaspoon ground cinnamon
- ½teaspoon ground nutmeg
- ½teaspoon ground allspice
- ½teaspoon salt
- 1 ½teaspoons baking soda
- 2tablespoons hot water
- 2cups sifted all-purpose flour
Instructions
Step 1
In a heavy saucepan, bring raisins and 1 cup water to a boil. Reduce heat to low and continue cooking 10 minutes longer.Step 2
Cream shortening and sugar. Stir in cooked raisins, 1/2 cup water, cinnamon, nutmeg, allspice, salt, and baking soda dissolved in hot water. Beat in flour. Pour batter into greased and floured 9 x 13 x 2-inch pan.Step 3
Bake at 350 F (175 C) for 25 minutes.Step 4
If desired, frost with cream cheese frosting .
