Strawberry Cookies
Sweet and fruity, these treats are strawberry shortcake in cookie form. Kids and adults alike will love them with a glass of milk.

Ingredients
- For the Strawberries:
- 2cups fresh strawberries (chopped)
- 1teaspoon fresh lemon juice
- 2tablespoons granulated sugar
- For the Dough:
- 2cups all-purpose flour
- ½cup granulated sugar
- 2teaspoons baking powder
- ½teaspoon salt
- 6tablespoons cold unsalted butter (cut into small cubes)
- ⅔cup heavy cream
- ½teaspoon almond extract
- For garnish: Pearl, turbinado, or sanding sugar
Instructions
Step 1
Gather the ingredients. Preheat oven to 350 F. Prepare two baking sheets by covering with parchment paper.Step 2
Prepare the strawberries. In a large bowl, combine the chopped berries, lemon juice, and 2 tablespoons sugar. Toss and set aside to macerate for 15 minutes.Step 3
Make the cookie dough. In a large bowl, combine the flour, sugar, baking powder, and salt.Step 4
Using a pastry blender, cut in the cold butter until the mixture resembles coarse crumbs.Step 5
Stir in the heavy cream and almond extract to moisten the dough.Step 6
Fold in the strawberry mixture.Step 7
Use a cookie scoop to form the cookies. Place on prepared baking sheets 2 inches apart.Step 8
Sprinkle with turbinado or pearl sugar. Bake in preheated oven for 15 to 20 minutes or until golden brown around the edges.Step 9
Transfer to a wire rack to cool to the touch.Step 10
