Green Tomato Cake With Nuts
This green tomato cake is a sweet one-layer cake filled with diced green tomatoes, chopped nuts, raisins, and, optionally, coconut.

Ingredients
- 2 ¼cups granulated sugar
- 1cup vegetable oil , plus more for greasing pan
- 3large eggs
- 2teaspoons vanilla extract
- 3cups flour, plus more for pan
- 1teaspoon salt
- 1teaspoon baking powder
- 1teaspoon ground cinnamon
- ½teaspoon ground nutmeg
- 1cup pecans
- 1cup raisins
- 2 ½cups finely diced green tomatoes
- ½cup or more of flaked coconut, optional

Preheat oven to 350 F. Grease and flour a 9 x 13 x 2-inch baking pan.Step 3
In a large mixing bowl, combine sugar, vegetable oil or shortening, eggs, and vanilla extract; beat until smooth and creamy.Step 4
Sift together flour, salt, baking powder, cinnamon, and nutmeg; slowly beat into egg mixture. Blend well.Step 5
Stir in pecans, raisins, and tomatoes.Step 6
Pour into prepared baking pan. Top with coconut, if desired.Step 7
Bake for 55 to 65 minutes, or until a wooden pick or cake tester inserted in the center comes out clean.
