Dairy-Free Chocolate Chip Cookies

Ingredients
- 2large eggs
- ¾cup white sugar
- ¾cup dark brown sugar (packed)
- ¾cup plus 2 tablespoons vegetable oil
- 1tablespoon vanilla
- 2 ½cups all-purpose flour
- ¾teaspoon baking powder
- ¾teaspoon baking soda
- ⅛teaspoon salt
- 1 ½cups dairy-free chocolate chips (best-quality, the smaller the better)
Instructions
Step 1
Gather the ingredients and preheat the oven to 375 F.Step 2
Using an electric mixer, beat the eggs, white sugar, and brown sugar together until light and fluffy.Step 3
Add the oil and vanilla and mix in thoroughly.Step 4
Add the flour, baking powder , baking soda , and salt and mix at low speed.Step 5
Fold in the chips by hand.Step 6
Drop the dough by heaping teaspoonfuls 1 inch apart onto cookie sheets lined with foil.Step 7
Bake only one tray at a time. If your cookie sheets are the professional heavy-gauge type, bake the cookies for 10 minutes. If they are lighter, bake for 8 minutes. The cookies will firm up as they cool, so do not be tempted to bake them longer or they will harden.Step 8
