Impossible Coconut Pie I
The pie makes its own crust. Just mix in a blender, bake and serve warm. You may leave out coconut if you wish.
- Serves: 1 person
- 2cups milk
- ½cup baking mix
- ¼cup butter
- ¾cup white sugar
- 1½ teaspoons vanilla extract
- 1cup flaked coconut
Step 1Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch pie plate.
Step 2Combine milk, sugar, biscuit mix, eggs, butter or margarine, and vanilla in blender container. Cover, and blend on low speed for 3 minutes. Pour into prepared pie plate. Let stand about 5 minutes. Sprinkle with coconut.
Step 3Bake for 40 minutes. Serve warm.
