Watermelon cake, made with fresh fruit and whipped cream, is easy to make and is a light and refreshing dessert to pair with your favorite summer fare
- Serves: 10 persons
- 1whole seedless watermelon
- 1teaspoon unflavored gelatin
- 3tablespoons cold water
- 3cups cold heavy whipping cream
- 2tablespoons powdered sugar
- 1teaspoon vanilla extract
- Garnishes: assorted fresh berries and sliced starfruit
Step 1Gather the ingredients.
Step 2Using a large chefs knife , slice off the top and bottom of the watermelon in a straight line. You will want the cut watermelon to sit flat on a surface and have a flat top.
Step 3Place the watermelon upright on a cutting board and remove all of the green and white rind from the sides. Carefully create a round shape as you cut.
Step 4Continue to trim the sides of the watermelon until it forms a cylinder shape that resembles a tall cake.
Step 5Place the watermelon on a serving platter and use a dry paper towel to pat the watermelon dry to remove excess moisture.
Step 6Sprinkle the unflavored gelatin over the cold water in a small bowl and let stand for 3 minutes. Microwave in 5-second increments until the gelatin is dissolved and liquefied.
Step 7In the bowl of a stand or hand mixer, whip the heavy whipping cream with the powdered sugar and vanilla extract. Start with the mixer on low and gradually increase the speed to medium.
Step 8When the beaters begin to leave a trail in the cream, slowly pour in the gelatin mixture.
Step 9Increase the speed to high and continue to beat until soft peaks form.
Step 10Spread the stabilized whipped cream all over the top and sides of the watermelon as you would frost a cake.
Step 11Garnish with assorted fresh berries and sliced star fruit.
Step 12Enjoy immediately or refrigerate until ready to serve.
Step 13Cut into cake-style wedges to serve and enjoy.
