Easy Candied Pecans
These spiced pecans combine the sweetness of cinnamon and the smoky flavor of vanilla for pecans that have a depth in taste that is a palate pleaser.
- Serves: 10 persons
- 2 ½cups pecan halves
- 2teaspoons vegetable oil
- 1cup granulated sugar
- 1teaspoon cinnamon
- ¾teaspoon salt
- ¼cup water
- 1teaspoon vanilla extract
Step 1Put pecans and oil in a flat baking pan; stir until pecans are coated. Roast in 300 F oven 20 to 25 minutes, stirring frequently. Cool.
Step 2Combine sugar, cinnamon, salt, and water in a saucepan; cook, stirring consistently, over medium heat until sugar is dissolved.
Step 3Boil to 236 F of a candy thermometer.
Step 4Remove from heat; blend in vanilla. Add pecans and stir until mixture is creamy.
Step 5Turn out onto waxed paper and use a fork to separate pecans.
