Easy Oven Egg Bite Recipe
These easy egg bites are a breeze to prepare and bake in the oven, and they are an excellent breakfast solution for anyone busy and on the go.
- Serves: 8 persons
- 8large eggs
- 1cup shredded cheddar cheese
- ⅓cup half-and-half, or whole milk
- ⅔cup diced tomatoes
- ½cup chopped baby spinach leaves, packed
- ⅓cup sliced green onions
- ¼teaspoon salt
- Dash pepper
- Pinch nutmeg, optional
Step 1Gather the ingredients. Position a rack in the center of the oven and heat to 350 F.
Step 2Spray a 12-well muffin tin with cooking spray.
Step 3In a large bowl, whisk the eggs with the shredded cheese, half-and-half, salt, pepper, and nutmeg, if using, until combined.
Step 4Add the diced tomatoes, spinach, and green onions; stir to combine.
Step 5Divide the mixture evenly among the muffin cups, about 1/4 cup in each cup.
Step 6Bake until they are set, puffed, and light golden, 15 to 18 minutes (they will deflate once removed from the oven).
