Ingredients
- For the Blue Layer:
- ⅓cup cold water
- 1(3-ounce) package blue Jell-o
- 1(1/4-ounce) envelope unflavored gelatin
- For the White Layer:
- 2tablespoons unflavored gelatin (from about 2 1/2 envelopes)
- ⅓cup cold water
- 2tablespoons sweetened condensed milk
- ⅓cup sugar
- ½teaspoon coconut extract, optional
- For the Red Layer:
- ⅓cup cold water
- 1(3-ounce) package red Jell-o
- 1(1/4-ounce) envelope unflavored gelatin

Gather the ingredients.Step 2
Line an 8x8-inch pan with foil, and spray foil lightly with cooking spray.Step 3
Combine the water, blue Jell-O, and unflavored gelatin in a medium bowl. Whisk together, then let sit at room temperature for 10 minutes.Step 4
Microwave the bowl for 30 seconds, then whisk well. Microwave for another 30 seconds, then stir. If sugar has dissolved and mixture looks clear, then pour into the prepared pan. If not, microwave for another 10 to15 seconds until all the sugar and gelatin have dissolved. Refrigerate pan to set the gelatin, about 20 minutes.Step 5
To make the white layer, whisk together the unflavored gelatin and 3 tablespoons of water in a small bowl. Set aside for 5 minutes.Step 6
Meanwhile, combine the remaining 3 tablespoons water, sweetened condensed milk, and sugar in a small saucepan. Heat the mixture on medium-low, stirring occasionally, until sugar dissolves and mixture comes to a simmer.Step 7
Add unflavored gelatin and whisk until the gelatin dissolves. Remove from heat and add coconut extract, if using.Step 8
Pour white gelatin over blue gelatin in the pan, and refrigerate until it sets, about 20 minutes.Step 9
Prepare red gelatin layer the same way as the blue. Pour over the white layer. Refrigerate until the mixture sets, about 20 minutes.Step 10
Once set, remove gelatin from pan using the foil as handles. Cut into small squares, or use a cookie cutter to cut into desired shapes. The yield will depend on the size of your cutter.
