Polish Mushroom Pierogi and Naleśniki Filling Recipe
This mushroom filling recipe can be used to fill Polish dumplings known as pierogi, crepes known as naleśniki, and little dumplings known as uszka.

- Mushroom Filling:
- 3cups mushrooms (fresh, finely chopped)
- 2large onions (finely chopped)
- 4tablespoons butter (or more)
- 4tablespoons breadcrumbs (fine dry, or more)
- Optional: salt and pepper (to taste)
- For the Pierogi Dough:
- 2large eggs
- 5tablespoons sour cream
- 3tablespoons oil (vegetable)
- 1teaspoon salt
- ¾cup broth (chicken)
- 4cups flour (all-purpose)
