Ingredients
- 10 gbutter
- 100 gpumpkin seeds
- 20 gblack sesame seeds
- 20 gsesame seeds
- 2 pinchessea salt
- 120 gcane sugar
- 20 ghoney
- 1 tbspwater
Instructions
Step 1
Heat the butter in a wide pan. Add the seeds and sesame, toast for approx. 5 mins. while stirring. Add the fleur de sel, remove from the pan.Step 2
Pour the sugar, honey and water into the same pan, bring to the boil without stirring. Reduce the heat and simmer, swirling the pan occasionally until a light brown caramel has formed. Add the seeds, mix. Transfer the mixture to a sheet of baking paper, place a second sheet on top, roll out very thinly with a rolling pin. Leave to dry for approx. 1 hr. Break the brittle into pieces.
