Ingredients
- 1fresh egg yolk
- 2 tsphoney mustard
- 1 tspwhite balsamic vinegar
- 2garlic cloves
- ¼ tspchilli flakes
- 1 dlolive oil
- ¼ tspsalt
- a littlepepper
- 800 gBrussels sprouts
- 2 tbspolive oil
- 2 tbsphoney
- ¾ tspsalt
Instructions
Step 1
Puree the egg yolk, mustard, balsamic, garlic and chilli flakes in a blender. Add the oil drop by drop to begin with, then more gradually, pureeing constantly to form a thick aioli, season.Step 2
Mix the sprouts, oil, honey and salt on a baking tray lined with baking paper.Step 3
Approx. 50 mins. in the centre of an oven preheated to 220°C.Step 4
Transfer the sprouts to a platter. Serve with the aioli.
