Caribbean Mahi-Mahi Holiday Soup
Caribbean Mahi Mahi Holiday Soup is a simple dish of mahi mahi fish, herbs and spices, garlic, tomatoes, and Golden Sun Tommy Bahama Rum.

Ingredients
- 2pounds boneless mahi-mahi (cut into 1 1/2 inch cubes)
- 2medium onions (sliced)
- ¼cup chives (chopped)
- ¼cup cilantro (chopped)
- 2large tomatoes (chopped)
- 1teaspoon fresh thyme
- 2tablespoons fresh lime juice
- 1tablespoon gold rum
- 2tablespoons butter
- 1clove garlic (minced)
- 1teaspoon sugar
- 1tablespoon Worcestershire Sauce
- 1cup fish stock (or low-sodium chicken or vegetable stock )
- Salt and pepper to taste

Gather the ingredients.Step 2
Place the fish in a large bowl.Step 3
In another large bowl, mix the onions, chives, cilantro, tomatoes, thyme, lime juice and rum together and pour over the fish.Step 4
Marinate for 1 hour , turning frequently.Step 5
Melt the butter in a saucepan; add the garlic and sugar and heat until mixture begins to bubble.Step 6
Add the fish and cook until golden.Step 7
Add the marinade, Worcestershire sauce, stock, salt and pepper to taste.Step 8
Lower the heat, cover, and simmer for 10 minutes.Step 9
Garnish with lime wedges and cilantro sprigs. Serve and enjoy.
