Banana Pudding Layered With Graham Cracker Crumbs
This pudding recipe is a comfort-food dessert. A homemade vanilla pudding is layered with graham cracker crumbs, bananas, and meringue.
- Serves: 5 persons
- 2large eggs
- ⅔cup sugar
- 1tablespoon cornstarch
- 2cups milk
- 1teaspoon vanilla extract
- 15graham crackers (crushed into crumbs)
- 2or 3 bananas (sliced)
- ¼cup powdered sugar
Step 1Heat the oven to 350 F.
Step 2Lightly butter an 8 x 8-inch baking dish.
Step 3Separate the eggs; put the egg whites in a clean, grease-free bowl—stainless steel or glass—and set them aside for the meringue. Whisk the egg yolks in a saucepan or in the top of a double boiler .
Step 4Combine the sugar and cornstarch in a separate bowl and mix thoroughly; add it to the egg yolks. Add the milk and whisk to blend.
Step 5Cook the pudding mixture over low heat until it is thickened and creamy, stirring constantly. Remove it from the heat, add the vanilla extract, and stir to combine.
Step 6In the baking dish, place alternating layers of graham cracker crumbs and sliced bananas. Top with the vanilla custard.
Step 7To make the meringue , beat the egg whites until soft peaks form. Add the powdered sugar and continue to beat until stiff peaks form.
Step 8Spread the meringue over the custard and bake for about 10 minutes or until the meringue is nicely browned.
