Salmon With Lemon Couscous
Salmon with lemon couscous is an easy and healthy recipe; salmon is broiled and served over a lemony couscous with green onion and tomatoes.

Ingredients
- 1lemon, washed
- 2tablespoons olive oil, divided
- 1onion, chopped
- ¼cup chopped green onion
- 1 ¾cups chicken broth
- 1 ¼cups plain couscous
- 1pound salmon fillets
- ½teaspoon kosher salt
- ⅛teaspoon freshly ground black pepper
- 1teaspoon dried dill
- 1cup grape tomatoes, halved cut in half)

Gather the ingredients.Step 2
Preheat oven to broil.Step 3
Grate 1 teaspoon zest from lemon and squeeze juice into a bowl; set aside.Step 4
In a heavy skillet, heat 1 tablespoon of olive oil over medium heat. Add onion and sauté until tender, 4 to 5 minutes.Step 5
Add chopped green onion, lemon juice, and chicken broth and bring to a boil. Stir in couscous and lemon zest, cover, remove pan from the heat, and let stand for 5 minutes.Step 6
Brush salmon fillets with remaining olive oil and place, skin side down, on a broiler pan. Sprinkle with salt, pepper, and dill. Broil for 8 to 10 minutes per inch of thickness. The salmon is done when flesh flakes easily.Step 7
Fluff couscous with a fork and then stir in grape tomatoes.Step 8
Place on a serving dish and top with salmon.
