Beef Prime Rib Roast With Red Wine
A beef prime rib roast is marinated in a red wine and garlic marinade and roasted to tender, juicy perfection.

Ingredients
- 1(6 to 8 pound) prime rib roast
- ½cup red wine (such as Cabernet Sauvignon or Pinot Noir)
- ¼cup olive oil
- 4cloves garlic (finely minced)
- 1tablespoon brown sugar
- 1teaspoon kosher salt
- 1teaspoon Cajun (or Creole seasoning blend or seasoned salt)
- ¼teaspoon fresh ground black pepper
- Kosher salt
Instructions
Step 1
Put the roast in a large food storage bag or bowl.Step 2
Combine the wine, olive oil, garlic, brown sugar, kosher salt, seasoned salt or Creole seasoning, and black pepper.Step 3
Pour the wine mixture over the roast, seal the bag, and turn several times to coat thoroughly. Or, turn in a bowl or container until thoroughly coated and cover tightly.Step 4
Refrigerate the marinating roast for 2 to 4 hours. Alternatively, let the roast stand at room temperature for up to 1 hour in the marinade.Step 5
Heat the oven to 400 F.Step 6
Remove the roast from the marinade and place it on a rack in a large shallow pan.Step 7
Sprinkle the roast lightly with freshly ground black pepper and salt.Step 8
Cover tightly with foil and roast for 45 minutes. Reduce heat to 325 F and remove the foil.Step 9
Continue roasting to 135 F to 140 F for medium-rare, about 1 to 1 1/2 hours longer.Step 10
Remove the roast from the oven and cover loosely with foil. Let stand for 15 minutes before slicing.
