Classic Kletskoppen
Crunchy "kletskoppen" are very thin, crisp almond cookies that are served with coffee or used as a dessert garnish in the Netherlands and Belgium.

Ingredients
- 3 ¼cups/750 grams butter
- 13 ¾cups/2750 grams granulated sugar
- 6 ⅔tablespoons/50 grams ground cinnamon
- 5tsp/25 grams salt
- 1pint /500 milliliters water
- 10cups/1250 grams all-purpose flour
- 7cups/750 grams almonds (chopped)

Gather the ingredients.Step 2
Melt the butter and mix it with the sugar, cinnamon, salt, and water.Step 3
Stir in the flour and carefully blend in the chopped almonds.Step 4
Let the dough rest for several hours in the fridge.Step 5
Preheat oven to 350 F/180 C.Step 6
Form little balls with a spoon or ice cream scoop and put on parchment paper. Cover with plastic wrap and flatten a bit.Step 7
Take the plastic wrap off and bake cookies for 8 minutes in the preheated oven.Step 8
Allow to cool on a wire serving rack and keep in an airtight container.Step 9
Serve with coffee or use as a dessert garnish. Enjoy!
