Basic Recipe for Great Roasted Vegetables
Vegetables are delicious when roasted but do need the right cooking temperature, pan type, and veggie prep to reach their optimal potential.
- Favorite vegetables, either one type or a combination
- 1 ½to 2 tablespoons extra-virgin olive oil
- Sea salt or Kosher salt to taste
- Freshly ground black pepper to taste
- Optional: Herbs and/or spices
Step 1Gather the ingredients.
Step 2Preheat the oven to 375 F or 425 F, depending on your preferred doneness. Wash and dry the vegetables. Peel, if desired, and chop or slice into fairly uniform pieces.
Step 3Line a large rimmed baking sheet with parchment paper. Arrange the vegetables in a single layer on the baking sheet, taking care not to crowd the pieces.
Step 4Drizzle or brush the vegetables with olive oil and toss to coat evenly. Season with salt, freshly ground black pepper, and herbs and or spices if desired.
Step 5Roast in the preheated oven for 35 to 45 minutes, stirring once or twice during cooking, until the vegetables reach your desired degree of doneness and caramelization.
