Chocolate Raspberry Tart
Here is a beautiful and delicious tart made with a luscious rich chocolate ganache and fresh raspberries with a pâte sablée for the crust.

Ingredients
- Pâte Sablée:
- 250grams all-purpose flour ( sifted )
- 200grams butter (cut into small pieces, slightly softened)
- 100grams confectioners’ sugar (sifted)
- Pinch of salt
- 2egg yolks
- Ganache:
- 250milliliters whipping cream (1 cup)
- 200grams good-quality semisweet chocolate (70% cocoa solids, preferably Valrhona, cut into pieces)
- 25grams liquid glucose
- 50grams butter (cut into small pieces)
- For Assembly:
- 200grams raspberries (ripe, fresh or frozen ones, defrosted and well drained, halved if large)
