Slow Cooker Stewed Fruit With Pears and Apricots
While many stewed fruit recipes take hours of hands-on cooking, this recipe uses the slow cooker so you can go about your day while your fruit cooks.
- Serves: 8 persons
- 16ounces prunes, pitted
- 8ounces dried apricots
- 8ounces dried pears
- 3cups water
- ½cup granulated sugar
- ½vanilla bean, or 1/2 teaspoon vanilla extract
- 1teaspoon finely grated lemon zest
- 2tablespoons fresh lemon juice
Step 1Combine all of the fruits together in your slow cooker along with the water, sugar, vanilla, lemon zest, and lemon juice. Stir to blend.
Step 2Cover and cook on low until the fruit is tender, about 6 to 8 hours.
Step 3Serve warm or at room temperature.
