Slow Cooker Stewed Fruit With Pears and Apricots
While many stewed fruit recipes take hours of hands-on cooking, this recipe uses the slow cooker so you can go about your day while your fruit cooks.

Ingredients
- 16ounces prunes, pitted
- 8ounces dried apricots
- 8ounces dried pears
- 3cups water
- ½cup granulated sugar
- ½vanilla bean, or 1/2 teaspoon vanilla extract
- 1teaspoon finely grated lemon zest
- 2tablespoons fresh lemon juice

Step 1
Combine all of the fruits together in your slow cooker along with the water, sugar, vanilla, lemon zest, and lemon juice. Stir to blend.Step 2
Cover and cook on low until the fruit is tender, about 6 to 8 hours.Step 3
Serve warm or at room temperature.
