Keto Chicken Bacon Ranch Casserole
Chicken bacon ranch casserole is a cheesy, bacon-filled keto casserole, using cauliflower rice. This one-pan meal comes together in under an hour for optimal chowing down.

- 8ounces cream cheese (softened)
- ¼cup ranch dressing
- ¼cup heavy cream
- ½cup chicken broth
- 2cups chicken (shredded)
- 1 ½cups cauliflower rice (cooked or frozen)
- 1cup cheddar cheese (shredded, divided)
- 6strips bacon (cooked and crumbled, divided)
- Salt and pepper, to taste
- ¼cup scallions (chopped)
Step 1Gather your ingredients. Preheat the oven to 375 F.
Step 2Whisk together the softened cream cheese, ranch dressing, heavy cream, and chicken broth in a large bowl until well combined. Make sure the cream cheese is softened for the easiest mixing.
Step 3Add in the shredded chicken, cauliflower rice, and half each of the cheddar cheese and bacon. Stir until the ingredients are all incorporated and the sauce coats the chicken and cauliflower rice. Add salt and pepper to taste.
Step 4Grease a large casserole dish, about 9-x 13-inch. Pour in the chicken mixture into the prepared casserole dish and use a spatula to spread it into an even layer. Top with the remaining cheese and bacon crumbles.
Step 5Bake for 35 minutes or until the casserole is heated through, bubbly, and golden brown on top.
Step 6Top with chopped scallions and serve immediately.
