Dairy-Free Oatmeal Chocolate Chip Cookies
This is a healthier alternative to traditional oatmeal chocolate chip cookies but just as irresistible, with dark dairy-free chocolate and rolled oats.

Ingredients
- 2cups rolled oats
- 1cup flour (all-purpose)
- 1cup light brown sugar (packed)
- 1cup powdered sugar
- 1teaspoon baking soda
- ¼teaspoon salt
- 3tablespoons canola oil
- 2large eggs (lightly beaten)
- 2tablespoons lemon juice
- 1teaspoon vanilla extract
- 1 ½cups dark dairy-free chocolate chips

Preheat the oven to 375 F. Line a large baking sheet with parchment paper and set aside.Step 3
In a large mixing bowl, combine the oats, flour, brown sugar , powdered sugar, baking soda , and salt.Step 4
In another mixing bowl, whisk together the canola oil, eggs, lemon juice , and vanilla extract until combined.Step 5
Add the wet ingredients to the dry ingredients, mixing until just combined.Step 6
Fold in the dark dairy-free chocolate chips.Step 7
Drop the mixture on the prepared sheet with a spoon, spacing the cookies about 2 inches from one another.Step 8
Bake for 8 to 12 minutes, or until lightly golden brown around the edges.Step 9
Remove the cookies to a wire cooling rack. Let them cool a few minutes before serving them warm, or serve later at room temperature.
