Ingredients
- 1large egg
- 1cup milk
- ¼cup seltzer water
- 2cups baking mix (such as Bisquick)
- Optional: 1 teaspoon butter

Heat an electric skillet to 325 F. Or place a skillet over medium to medium-high heat.Step 3
In a large bowl, whisk together the eggs, milk, and seltzer water.Step 4
Stir in the baking mix just until mixed and the large lumps have disappeared, but small lumps remain. Be careful not to over-mix.Step 5
Let the batter rest for 5 to 10 minutes.Step 6
Melt the optional butter on griddle or skillet, if using. (You can also use nonstick cooking spray.)Step 7
Ladle 1/4 cup of pancake batter onto the griddle.Step 8
Cook until tiny bubbles appear on the surface of the pancakes and the bottom starts to brown. If the bottom starts to brown before the pancakes are cooked, turn the heat down.Step 9
