Roasted Chateau Potatoes
Chateau potatoes date back to the Napoleon Bonaparte era and were the accompaniment to chateaubriand. These buttery potatoes are sautéed and roasted.

Ingredients
- 8tablespoons butter (1 stick)
- 2pounds potatoes (peeled and cut into small ovals)
- Optional: 1 tablespoon fresh parsley (chopped)
- ¾teaspoon salt
- ¼teaspoon ground black pepper
Instructions
Step 1
Preheat the oven to 400 F.Step 2
Melt the butter in a large ovenproof skillet over medium-high heat. Sauté the potatoes in the butter for 5 minutes.Step 3
Place the skillet into the oven and roast the potatoes, tossing often, for 20 minutes.Step 4
Remove the skillet from the oven and sprinkle the browned potatoes with the chopped parsley, salt, and pepper. Serve the chateau potatoes immediately.
