Chateau potatoes date back to the Napoleon Bonaparte era and were the accompaniment to chateaubriand. These buttery potatoes are sautéed and roasted.

    Preheat the oven to 400 F.
  2. Step 2

    Melt the butter in a large ovenproof skillet over medium-high heat. Sauté the potatoes in the butter for 5 minutes.
  3. Step 3

    Place the skillet into the oven and roast the potatoes, tossing often, for 20 minutes.
  4. Step 4

    Remove the skillet from the oven and sprinkle the browned potatoes with the chopped parsley, salt, and pepper. Serve the chateau potatoes immediately.
