Crock Pot Hamburger Soup
This is a yummy recipe for crockpot hamburger soup with ground beef or hamburger, chopped onion, frozen mixed vegetables, tomato sauce, and pasta.

Ingredients
- 1pound ground beef
- 1onion (chopped)
- 1(16-ounce) package mixed frozen vegetables (carrots, cut green beans, lima beans, corn kernels)
- 3ribs celery (chopped, including tops)
- 1(14.5-ounce) can beef broth or about 2 cups homemade beef stock (preferably low sodium or unsalted)
- 1green pepper (chopped)
- 1envelope dry onion soup mix
- 1(8-ounce) can tomato sauce
- ¼cup barley
- ½teaspoon freshly ground pepper
- 2tablespoons fresh oregano (chopped or 1/2 teaspoon dried oregano)
- 2tablespoons fresh basil (chopped or 1/2 teaspoon dried basil)
- 2sprigs fresh thyme (or 1/2 teaspoon dried thyme)
- ½teaspoon paprika
- 1bay leaf
- 1tablespoon seasoned salt
- 1tablespoon soy sauce
- ½cup fresh (chopped parsley or 2 tablespoons dried parsley)
- 1cup macaroni (uncooked)
Instructions
Step 1
Brown the ground beef in a skillet or sauté pan; drain off excess fat. You can reduce fat content even further by placing the beef in a colander and running hot water over it.Step 2
Put the beef and all ingredients except the pasta into the slow cooker. Add water to within an inch or so of the top of the crock pot.Step 3
Cover and cook the soup on low for 8 hours. Alternatively, cook the soup on high for about 3 to 4 hours.Step 4
About 30 minutes before serving, cook pasta in boiling salted water ; add to the crock pot and heat through.
