- Serves: 16 persons
- 200 gdark chocolate (64% cocoa)
- 110 gbutter
- 70 gcane sugar
- ¼ tspbourbon vanilla sugar
- 1 pinchsalt
- 80 gwhite flour
- 10 gcocoa powder
- 20 gground almonds
- 80 gmini marshmallows
- 60 gdark chocolate (64% cocoa)
Step 1Place the chocolate and butter in a thin-sided bowl. Suspend over a gently simmering bain-marie; the bowl must not touch the water. Melt the chocolate and stir until smooth, allow to cool slightly. Mix the eggs, sugar and vanilla sugar in a bowl. Add the chocolate and salt, mix. Sieve the flour and cocoa powder, add along with the almonds, mix. Transfer the brownie mixture to the prepared tin, smooth down.
Step 2Approx. 25 mins. in the centre of an oven preheated to 180°C. Scatter the marshmallows on top and return to the oven for approx. 4 mins. Remove from the oven, allow to cool slightly, remove from the tin and leave to cool completely on a rack.
Step 3Place the chocolate in a thin-sided bowl. Suspend over a gently simmering bain-marie; the bowl must not touch the water. Melt the chocolate, stir until smooth, spread on top of the brownies.
