Gluten-Free Oat Pancake
If you tolerate gluten free oats, this recipe for gluten free oatmeal pancakes is a change of pace from cereal. The batter can be made the night before.

Ingredients
- 1 ¼cups oats (I use "certified" gluten free oats)
- ¼cup oatmeal (fresh ground, see tips)
- ¼cup amaranth
- 1teaspoon baking soda
- ½teaspoon salt
- 1teaspoon sugar (or honey)
- ½teaspoon guar gum (OR xanthan gum)
- 1cup yogurt (plain)
- 1cup milk (or coconut milk)
- 2large eggs (lightly beaten)
- 1teaspoon vanilla
Instructions
Step 1
Combine all dry ingredients in a large mixing bowl.Step 2
Add yogurt, milk, eggs and vanilla and stir until mixture is creamy.Step 3
Refrigerate for 30 minutes.Step 4
Place 1 teaspoon butter or light olive oil in a large, heavy skillet. On medium heat, warm the pan until the butter melts.Step 5
Pour about 1/2 cup pancake batter into the hot pan and cook until bubbles form and the bottom is golden brown.Step 6
Carefully flip and cook until the second side is golden brown.Step 7
Serve with maple syrup, toasted chopped pecans, walnuts or fresh fruit.
