Low-Calorie Coconut Couscous Recipe
This is a quick cooking couscous recipe using light coconut milk for a creamy and tasteful side dish. Top with meat or fish for a complete entree.

Ingredients
- 1cup light coconut milk
- ½cup water
- ¼tsp salt
- 1cup uncooked plain couscous
- 1green onion , white and light green parts, chopped (about 2 Tbsp)
Instructions
Step 1
Pour the coconut milk, water, and salt into a medium-sized saucepan. Bring the mixture to a boil over medium-high heat.Step 2
Pour the couscous into the coconut milk mixture, remove from the heat, cover the pot with a lid, and allow it to sit for 5 minutes.Step 3
Add the chopped green onion to the couscous, and fluff with a fork.Step 4
Serve as a side dish or top with vegetables, meat or fish for a complete entrée.
