Islander cocktail

Try this sophisticated cocktail for your next summer gathering with friends. Mix up dark rum, smoky mezcal, fruity lime and grapefruit with cocoa bitters

Ingredients

• sea salt, to garnish
• seaweed or kelp powder, to garnish (optional)
• handful ice
• 40 ml dark rum
• 1 tbsp green chartreuse
• 1 tbsp mezcal
• 25 ml lime juice
• 2 tsp sugar syrup or gomme
• 1 tbsp grapefruit juice
• 2 dashes Angostura cocoa bitters

Steps

1. Rim a coupette glass with salt and seaweed, if using. Fill a cocktail shaker with the ice and then add all the remaining ingredients. Shake well to combine, until the mixture is chilled. Double strain into the glass.
