Easy Breakfast Casserole With Sausage and Potatoes
This easy breakfast casserole recipe is prepared with hash browns, eggs, and layers of browned sausage and cheese. It's great for a family brunch.

Ingredients
- ½pound pork sausage (spicy or mild)
- 1medium onion (chopped)
- 4cups hash brown potatoes (frozen, diced; thawed; about 16 ounces)
- 1 ½cups Monterey jack (or cheddar cheese, shredded and divided )
- 3eggs ( beaten )
- 1cup milk
- ¼teaspoon pepper
- Optional: mild salsa

Gather the ingredients.Step 2
Heat the oven to 350 F/180 C/Gas 4. Butter an 8-inch-square baking dish.Step 3
In a large skillet, cook sausage and onion, breaking up sausage with a spatula. When sausage is cooked through, drain off excess fat.Step 4
In the prepared baking dish, layer the hash brown potatoes , half of the shredded cheese, browned sausage and onion mixture, then the remaining shredded cheese.Step 5
In a bowl, whisk together the eggs, milk, and pepper; pour the egg mixture over cheese.Step 6
Cover the baking dish with foil and bake for 45 to 55 minutes, or until a knife inserted near center comes out clean.Step 7
Transfer the casserole to a wire rack and let stand for 10 to 15 minutes.Step 8
Cut into squares. Serve with salsa, if desired.Step 9
