Vegan Mashed Potatoes
For the holiday table or a quick side, ultra-creamy mashed potatoes are a welcome addition to a meal. We use Yukon Gold potatoes and plant-based butter.

Ingredients
- 8large Yukon Gold potatoes
- ½cup earth balance
- 5cloves garlic
- 2teaspoons kosher salt
- ¼teaspoon black pepper
- 1teaspoon rosemary

Gather the ingredients.Step 2
Add the potatoes and 1/2 teaspoon salt to a large pot, then fill with enough cool water to cover by 1 inch. Place the pot over medium-high heat with the lid on and bring to a boil.Step 3
Reduce the heat to medium-low, remove the lid, and let simmer until the potatoes are fork tender, about 20 minutes.Step 4
Reserve 2 cups of the potato cooking water, then drain the potatoes.Step 5
Transfer the potatoes back to the pot. Add the melted vegan butter, roasted garlic, remaining 1 1/2 teaspoons salt, pepper, and herbs (if using).Step 6
Mash thoroughly until the ingredients are fully incorporated.Step 7
Add 1/2 cup of the reserved cooking water at a time until the potatoes are fluffy and your desired consistency. Serve warm topped with additional vegan butter, if desired.
