Syrniki
Syrniki are sweet and tangy Russian pancakes thanks to farmers cheese in the batter. They are delicious served with blueberry sauce and sour cream.

Ingredients
- 16ounces farmer’s cheese
- 3eggs
- ½teaspoon vanilla extract
- ¾cup all-purpose flour (divided)
- 3tablespoons sugar
- ½teaspoon salt
- ½teaspoon baking soda
- ¼cup light vegetable oil (for frying)

Gather the ingredients.Step 2
Break up the farmer’s cheese into small crumbles in a large bowl.Step 3
Whisk in the eggs and the vanilla extract.Step 4
Add in 1/2 cup of the flour, sugar, salt, and baking soda. The batter will be thick and more like a cookie dough batter than a normal pancake batter. Put the remaining 1/4 cup flour in a shallow dish.Step 5
Use a cookie scoop to scoop out the balls of dough. Place the ball of dough into the shallow dish filled with flour.Step 6
Dredge the pancakes with the flour to coat both sides and then flatten with a spatula.Step 7
Heat the oil on medium-low heat in a cast iron pan or large sauté pan. Once hot, place the pancakes in the oil. Fry on both sides for 3 minutes a side, or until golden brown.Step 8
Serve immediately with your favorite syrup, fruit or whipped cream.
